(Pansit) Molo Soup




Molo Soup, also known as Pansit/Pancit Molo is very similar to dumpling soup. It has local-style dumplings cooked in a rich chicken broth and garnished with toasted garlic and spring onions (my favorite parts).


My main concern about this dish is the dumpling wrapper - use good dumpling wrappers or else the dish will be ruined. Cheap wrappers use low quality flour, so just like in baking, bad flour means bad bread.

So here is the recipe:

(Pansit) Molo Soup

Ingredients:
200g ground pork
125g chicken (use bony parts like neck and lumbar to make broth)
1/2 cup reconstituted shiitake mushrooms, finely diced
1/4 cup peeled shrimp, finely chopped
1 cup chopped spring onions
1 pack dumpling wrappers (keep chilled)
2 tbsp flour
1 large shallot, finely diced
10 cloves garlic, chopped
2 tbsp oyster sauce
salt
ground pepper
cooking oil
chicken broth (optional)

Instructions:
1. Fry garlic until brown and toasted. Set aside.
2. In a stock pot, boil chicken in about 4 cups water.
3. Once cooked, shred chicken meat and put back in the pot.
4. Dumplings: In a bowl, combine ground pork, mushrooms, shrimps, onions, 1/2 cup spring onions (keep other half for later), flour, oyster sauce, salt and pepper. Wrap in dumpling wrappers.
6. Drop dumplings into the boiling chicken stock one at a time.
7. Add broth cubes if you want a richer stock.
8. Drizzle fried garlic and spring onions before turning off the heat.
